Wood-ear fungus or cloud ear is a species of edible fungus that has a lovely flavour. It lends its crunchy texture to many Asian dishes. They are most often used in Chinese cuisines. Before using, soak the fungus in cold water for at least fifteen minutes. Mostly available during the monsoon season, they are commonly sold shredded or dried in Asian markets. It can be kept for upto a year if stored in an airtight container.
