Sweet/Thai basil is a versatile herb, which is another important ingredient in Thai cooking. Its familiar aroma is often easily detected in many dishes. It is used in Thai salads and as a garnish for curries and stir fries. Chop the leaves just before adding to dishes to avoid blackening. All varieties of basil are available throughout the year. Wrap the leaves in damp paper towels, put it inside a plastic bag and store in the refrigerator for 3-5 days.
