Sambal Oelek

‘Sambal’ refers to a condiment or side dish in Malaysian, Indonesian and Singaporean cuisines. It is widely used in Southeast Asian dishes, usually as an accompaniment to prawn, beef and chicken-based dishes. It is one of our favourite pantry ingredients because it adds a fiery sharpness to food. Sambal is served in small amounts with meat, vegetables, fish and seafood dishes, too. Sambal Oelek, a spicy blend of red chilli, vinegar and sugar, is delicious, and it is often served as dip with prawns.
