Red chillies are a great addition to any pantry and can be used for a variety of dishes to add colour and a burst of chilli heat. Chillies in a dish should stimulate the palate and not simply burn the tongue, so it is important to find the right balance. Try red chillies in a Thai stir fry – start by stir-frying chillies in a little hot oil with garlic to release their flavours and aromas prior to adding the other ingredients. To avoid irritation, wash your hands well after handling chillies. Fresh chillies can be refrigerated for upto 3 weeks. They should be wrapped in paper towels to preserve their freshness.
