- Heat up oil in a frying pan over medium heat.
- Fry shallots and garlic for 1 min, or until golden brown.
- Add diced tomato and stir fry for 2 mins.
- Add baked beans, tomato sauce and water, and allow to boil. Reduce heat to a simmer.
- Pour in beaten eggs over the top, then cover with a lid and cook for 5 mins, or until eggs are cooked.
- Season with salt and pepper and garnish with chopped coriander.
- Serve with white rice.
